Our Process
It starts with the essentials. We calibrate our premium wheat flour and prepare a precise solution of purified water, salt, and Kansui (alkaline salts). Getting the ratio exactly right at this stage is critical to ensure the texture remains consistent in every batch.
Ingredients are blended in our heavy-duty mixers until they form a coarse, crumb-like texture. We then feed this mixture through multiple rollers. This high-pressure rolling process compresses the crumbs into a solid, smooth dough sheet, removing air pockets and increasing density.
Good dough needs time. We allow the sheets to rest in a controlled environment. This resting period lets the gluten structure relax and develop fully. It’s a crucial step that gives the final noodle its elasticity and firmness (the "bite") when cooked.
Once the dough has matured, we apply a light dusting of flour to prevent sticking. The sheets are then run through precision cutters to achieve the specific width and shape required—whether it’s a thin ramen or a thick udon.
Immediately after cutting, the noodles are weighed and portioned automatically to ensure standard serving sizes. They are sealed in hygienic packaging to lock in freshness and protect the product from external contaminants.
We take cold chain management seriously. Our fresh noodles are chilled, while other lines are flash-frozen to preserve quality for longer distances. Our logistics team coordinates the delivery to ensure the product remains at the safe, optimal temperature until it reaches your kitchen or retail store.
